When I click on a link that goes to a pdf a title is shown in the pdf file tab. Where does the title shown in the tab come from?

Chosen solution

It can be either the Title property of the PDF, or if that is blank, the file name of the PDF.

You can view the Title property in Adobe Reader using

File > Properties, then Description tab

Note that the PDF Viewer has a Document Properties item in the overflow (>>) drop-down list. See also the Web Console (3-bar Menu button or Tools > Web Developer).
