on version 4 you could enable touch support, How or can I use touch on version 5, this is a major feature that I use for work everyday and I do not want to have to change browsers just for this reason.

It appears to be in the experimental stage at the moment as far as I can tell and a fully fledged version won't become available until Firefox 6.0 is released on August 16. That's my assumption based on the following docs.

The reason I'm guessing it's still in the experimental stage is because if you look at the foot of the page under the heading "Gecko Notes" in the second link above, you'll see the following setting: dom.w3c_touch_events.enabled.

However, I've just checked in about:config and that value is not present in Firefox 5.0.1

But please hang on for a few hours until one of the Moderators arrives (either co-rel, the-edmeister or tonyAE) and perhaps they can shed a bit more light on the subject.
