Does Firefox v115.15.0esr retain cookies from "legitimate interest" companies please?

I'm using Firefox v115.15.0esr because I'm using Windows 7. I'm in the UK. Every now and then I get to a website which asks about cookies permissions and then proceeds to give me a huge list, hundreds of alleged companies which have a "legitimate interest" in me having their cookie, which I have to individually search through and deselect. Is there a way around this please? Does firefox ignore/prevent the cookies under the "Enhanced Tracking Protection" policy? or by accepting them do I still get them? I have ticked "Delete cookies and site data when Firefox is closed" so am I correct to assume that all cookies that make it to my PC get erased anyway when I close the browser?
