Until I updated to Firefox 3.6.8 today my toolbars were not gray; how do I change the color?

You can change the bar color through Themes:

https://addons.mozilla.org/en-US/firefox/themes/

To my knowledge there was no major theme change from 3.6.7 to 3.7.8 so i'm not sure why you were seeing white before.
