Why do copies of emails contain an A with carrot above

When emails are sent and my copies in the sent folder all contain extra characters that look like some sort of formatting character like a capital A with a carrot, ^ , on top.

How do I stop saving and printing these characters added to what I typed. When I want to reply again, I have to manually delete all these characters in my orginal message to make it readable again

Is this an IMAP account? Do you have your character encoding set to use UTF-8? (recommended for all languages)
