Thunderbird cannot know your new password.

But yes, your old emails can be seen without any password. But without the new password, the person who has acquired your machine cannot download new messages nor send messages via your accounts.

Thunderbird's design assumes that if privacy is important to you, you would use the features provided by your OS; user accounts, disk encryption and so forth.
