How can I get back to the screen with Inbox, Outbox, etc, along with list of my incoming messages by subject? Now only seeing 1 message, nothing else.

I've lost my opening screen. This is the one that shows in a left hand column, Inbox, Outbox, etc. Then on the top right hand column there appears a list of my incoming emails by subject and "from" person, etc. Below this on the right is the message from the email message that I've highlighted. How can I get this screen back? Where do I look. I can't find it anywhere

Can you provide a screen shot? Then we can tell what you have and haven't got and go from there.

I suspect that you have a message open in a tab and so it occupies the whole of Thunderbird.

We need to see the top part of Thunderbird, so you could use the Snippings Tool to remove the message text itself.
