My folders have gone. One of my inboxes says it is full yet only has about 8 emails in it, will not let me delete or move the emails elsewhere.

Hello,

1. We have 9 emails with you - our invoices@ email inbox is saying it is too full even though there are only x8 emails in there, it will not let me delete any or move any, they just bounce right back into the inbox. This means that no invoices are being received.

2. Our enquiries inbox had lots of folders and subfolders and they have now completely GONE!

3. I need to make it so that any emails that go to our shop@ inbox, only go to enquiries@ inbox (and then delete shop) but this matter is not as urgent as the previous two.

Is the account IMP perhaps? I suggest you log into your providers webmail and actually delete some mails then empty the trash as what is in trash counts towards quota usage in every IMAP mil account I have ever had.
