I always get email containing text an a graphic. The text is always different. So it is impossible to set the filter on this text. Only the text on the graphic is the same. So I need to filter on the text in the graphic. Is there a OCR function for text in a graphic on which I could filter?

it is called image spam and is used by spammers because mail clients can not read the text on the image.

Thank you for the info. But I would like to get a solution. There should be a OCR function for text in a graphic on which I could filter? Is such a function provided? If YES where?

What part of "mail clients can not read the text on the image: did not not get.

If you want OCR, you will not be finding it in email clients. You will be needing tools like spamassasin, but that is a mail server product and in reality should be deployed by your mail provider whoever that is.
