All menus in Thunderbird now have a black backround. Emails have the backround I selected but it seems all other pages and the headers have a black backround instead of the default white.

They can be. Not always, but your description sounded like that was the source of your problem

Ok, I've three themes, two of them are Light and Dark, both disabled. And a default TB theme. What do I do now? It's kind of so not obvious it's infuriating.

Click the enable button in the same line as the theme name

ok, then try the light theme. Or correct your windows theme. most of the colors in themes are taken from those set by the windows theme. Is windows also showing dark theme colours?
