People change emails address - how can I delete an email that is autofilling

I don't use address groups - so now when I try to type an email to someone who has changed their email address - the old one always auto fills first --- how can I delete the old one ? Can I do it right in the Compose area ? because my emails are all in one HUGE lump and I probably can't find the old email addy any other way ????

Delete the contact with the old email address in your address book(s).

Christ1 - dude - that is exactly what I am asking you HOW to do when it is all a mush of one big address book - is there a way to delete it in the Compose area when it pops up automatically? or do I have to write it down and slug through hundreds looking for it ?

You could use the Address Book search box. That's essentially the same as entering the name or address in the To: field of a Write window.
