Noob here, my mom is using thunderbird to transfer/get rid of emails from her AOL account. There are multiple folders she has that don't transfer over using thunderbird's defaults. How do we get them to transfer over. We have it set to POP if that helps.

POP only downloads the Inbox. To download other folders, add the account as IMAP in TB, and 'subscribe' any folders that don't appear automatically after setup. TB should autodetect the settings for AOL, unless it's a Verizon/AOL account, which requires an app password for TB instead of the account password.
