I can only see unread messages
1. I have been using windows live mail which seems to crash a lot since updating to Windows 10. Thunderbird was recommended and I have set up the accounts for myself but when I first set it up it only showed message up to 2 months old - how do I see older ones?
2. I closed down my PC and when I re-started in the morning my Thunderbird account only seem to show unread emails and nothing else, is this normal and can I change this?

Right click the account in the Folder Pane on the left side and select Settings. Go to Disk Space and see what your retention settings are set to.
Go to ... View-Threads and make sure All is set. It sounds like you are set to Unread.
I looked in Disk Space and there is no mention of retention other than when to delete messages, the button 'do not delete any messages' is chosen.
I went to view - threads and 'all' was selected already.
Check the current sort by settings: View > Sort by > select these options: 'Date', 'Descending' and 'unthreaded'
Check the 'Quick Filter Bar' (image below): Is the 'show only unread messages' icon (looks like a pair of sunglasses) selected ? click on that icon to release that sort.
Both of those suggestions were already in place, the only emails visible go back 3 days still.
