The Email Address Crawler add-on will collect email addresses from messages.

To share an address book between different devices, you need to either carry it about with you, or place it "in the cloud".

I use Google Contacts for convenience and the ability to co-operate with Android devices. You'll need the gContactSync add-on to connect Thunderbird's Address Book to the Google Contacts address book. .

If you want to sync with other installations of Thunderbird, then there are addons that let you upload and download address book files. I use one of these with DropBox. It also lets you use a folder in an IMAP connected account, or your own http or ftp server.
