Is there any way to disable (grey out) or hide the bbc option in the write section, to not be modified but still send emails with bcc to that address?

I presume you have set up a Bcc a specific email address in the Account Settings > Copies & Folders section for that mail account. Those Bcc details will be displayed in the Write window and then used when the email is sent. It will show : 'From' your email address 'Bcc' the email address for Bcc 'To' with cursor ready to enter in the TO field.

You cannot hide/disable essential information that is required for the email. Bcc is only shown if you have specified a Bcc email address. All Bcc and To fields are editable both in the Write window and via Account Settings.

Why would you want to be unable to check or choose to uncheck an auto filled Bcc field? After all, you might want to send a personal email.
