Because Mozilla does not fund Thunderbird. All development and support is donated. I am sure if you want to step up and write a blank check for the development the programmers would accept it. There are plenty of email apps for phone already.

I have heard of no plans for Thunderbird version for phones or tablets. Most phones have an email client already on them. Why not use that?

Yes there are plenty of email apps for android phones. But I gather that Thunderbird privacy is a step above the rest, unless you plan to encrypt everything.
