While I appreciate many of the new addressing area features in TBird 78 for many use cases, it's a pain for me (doing everything via keyboard, having at least To and CC in most of my emails, BCC and/or reply-to still in the majority of emails). Please do tell me that there is an about:config item that allows me to show the now-optional address fields by default. I looked quite a bit and couldn't find anything. Thank you for your time and effort!

The new addressing is described at https://support.mozilla.org/en-US/kb/addressing-email

There are no hidden nor any non-hidden preferences for customizing. However, some users have expressed similar needs, so the feature is still evolving and there will be improvements.
