Ubuntu upgrade updated me to FF 3.6.3 and the "File,Edit,etc" line turned black and I don't like it.

Ubuntu created their own theme for Firefox 3.6, see the Ubuntu forums for help with that. http://ubuntuforums.org/

Or install a different theme.
