I changed my update channel to beta by mistake, and it updated to a beta, and now their is no option to change it back.

You can only change the update channel if you uninstall Firefox and delete the Firefox program folder or install a release or beta version that copies a new file channel-prefs.js. Updating Firefox never changes the update channel. Only a full install will do that.

Release. I went back to 4.0.1, but still can't change it.
