I can get the contacts list to sort by last name just fine by changing the Show as Last name, First name but I would then like it to show the contact list by First name, Last name. Is there no way to sort by last name but show by first name or am I just missing something?

There is no way I'm aware of. You are wanting a two-level sort and that isn't offered.

I have the same sort of problem. I have my address book listing set to "Last, First" so I can see and search by last name, but when I enter a new address in the Address Book, the "display name" of the person added is also set as "Doe, John".

So whether or not I have "Prefer display name over message header" checked, when I put "John Doe" in the To : field, I type the name in and Thunderbird puts in the rest : John Doe >> Doe, John <john_doe@domain.com> and when I click in the Subject field, it puts it back to Last, First name in which is not very friendly!

This means that I have to edit the "Display name" field for each entry to put them the right way round and without a comma.

Why can't the display name always default to "First Last" irrespective of the listing setting? That is what the old address book did, so why change it?
