Whenever I load a Google Doc, I get a message saying it is too wide to display on the screen and telling me to resize the browser window (which I've already maximised), then the area where the document should be goes plain grey, then a little box comes up saying 'Trying to reach Google.com'. A colleague reckons it's an add-on issue, but with which add-on?

With over 13000 Addons on the Mozilla add0on website alone, it's impossible to know which ones cause issues and which ones don't. Especially since you have so many add-ons, it possible that one or more of them is the troublemaker here. Your best bet is to do one of the following:

Start Firefox in Safe mode, see if the problem exists there. If it doesn't, it's an add-on and you need to disable them one by one until you find the problem. Diagnose Firefox issues using Troubleshoot Mode

Or, Use Firefox Reset to Reset Firefox to it's default settings, and delete all your add-ons. You can then reinstall them one by one until google docs stops working. (this is the most surefire solution). Refresh Firefox - reset add-ons and settings
