Most browsers show you the target of a hyperlink when you hover over it, usually displayed at the bottom in the status bar. This lets you check before you click, and is great for security and comfortable experience. Since you can click links in Thunderbird and open your browser, the same concerns apply, and right now the only way to check before you follow the link is to right-click, copy the address, and paste it somewhere you can read it...

Is there a way to turn this on? Otherwise, consider this a feature request.

That is a function of the Status Bar. Maybe you need to turn yours on.

From the menu bar select View-Toolbars-Status Bar

No menu bar? Press the alt key.
