The website gives instructions for moving email information from Outlook 2007 to Thunderbird, are these instruction applicable to Outlook 2003? In other words will the instructions work on Outlook 2003, which I have, or are there different instructions to move content from Outlook 2003 to Thunderbird?

All versions of Outlook import to Thunderbird the same way.
They require Outlook to be installed and only PST files in the default outlook set and loaded in Outlook will be imported.

Thank you for your help, after 15 years of Outlook it is time to move on. I go back to when it was stand alone and free, now it is part of Word and getting more expensive than ever, and filled with things that I don't even need.

Personally I am something of a refugee from outlook when it still only did text messaging. No rich text. Outlook Express was at the time free and more capable. So I come to Thunderbird from Outlook Express.
