When I click on Inbox, I am only shown my current unread emails. I need to be able to see all emails, read and unread!

It looks like a message view setting only allows Thunderbird to display unread messages. Please have a look at the Switching the folder pane view article. You might need to select View (in menu) > Folders > All.
