There is currently not a way to change your Firefox account e-mail address although I do know work is being done to implement that option ASAP.

In the meantime, you can go ahead and sign out of your existing Orange e-mail on all devices and create a new Firefox Account with your Gmail and log in with that from now on. Previously synced data with the old account will not go away but will instead be synced when you log in with Gmail. Gmail will take over syncing duties from Orange.
