I purchased a new laptop for my wife, windows 11 and now is in S mode to be able to add Thunderbird. I ended up having to add her email address to my laptop to get a code sent. I now want to delete her email address and emails from my laptop. Can this be done without affecting her laptop with the same email address and emails in the Inbox? Sincerely, Tom / G T Inc.

Yes. See https://support.mozilla.org/en-US/questions/1325738

You will be prompted to also remove message data for that account. Do so. This will only affect messages stored on your computer, not hers, as long as you're performing these actions on your computer.
