I am trying to restore some old email messages that I need to look at which were backed up using Tools/ Import/ExportTools /Options /Backup Scheduling. How do I do this as there is no restore function on any menu ? I can see my backup files in a Mailbackup folder.

Did you choose to back up 'All profile files' or 'Just mail files' in the ImportExportTools options? Mail files (mbox files) are named like Inbox, Sent etc. and have no extension. To restore them, right-click a subfolder of Local Folders, ImportExportTools/Import mbox files.

The backup files I am trying to access are in a folder called: rk4flxrz.default-20140304-1729 I can also see a sub folder called Mail, then the pop3 account and then the Inbox. It will only display the first message. I do not see an mbox file anywhere ! Surely there is an easier way to restore one' mail ? I have chosen to back up 'All profile files' in the options.

No there is not an easier way to restore one mail. Use the import export tools to import the mbox file you have found into Thunderbird, extract the mail you want and delete the folder from Thunderbird or you will be backing it up twice.
