When I go to "About Firefox" in the browser it says FF is up to date. When I come to mozilla.org, it says it is out of date.

See this question. The automatic update has temporary been disabled due to some crash/connectivity issues in particular configurations. Please wait a bit - it will probably be enabled again soon.

I’m not entirely sure but assume the website content will not change. I’d suggest to wait a bit rather than installing 55 from the website at this point since your profile will be migrated, and reverting to 54 will need a new profile or a refresh of the current one, in case you run into these issues.
