Could you be more exact please about the circumstances in which this occurs: 1) If an email arrives in your inbox from a 'new' (not previously saved) address, and you delete the email unopened, does Thunderbird add the address to your Address Book? 2) If an email arrives in your inbox from a 'new' address, you open and read the message and then delete it, does Thunderbird add the address to your Address Book? 3) If an email arrives in your inbox from a 'new' address, you open and read the message and then forward or reply to it, does Thunderbird add the address to your Address Book? I ask because if it is (3) that you don't want, you can turn off that behaviour in the Preferences > Composition tab, but if it's (1) or (2) then that's behaviour I haven't encountered before. Thank you.
