How can I make a site allow me to chose Thunderbird as my email when I press the email icon and I get the options of gmail, yahoo mail and other, but when I press chose other it will not give me the option of Thunderbird?

Open Firefox Settings, General, and in the Applications section select TB for mailto content type (see picture). TB should appear if it's the default email app.
