When on Firefox I have had several different websites tell me I need to update Firefox, but I have Version 6 (2) according to my settings wheel. What can I do so those sites recognize that I am updated?

Could you provide us where you told to update? Many fake Firefox updates have been popping up recently, but I doubt it would target mobile users.

The other option is to uninstall the app completely and install it again from the App Store.

The Firefox shell browser for iOS is at version 6.0

Firefox for iOS is pretty new compared to desktop and Android Firefox as to why it has a low version number. It also does not use the same Gecko and JavaScript engines as Firefox on desktop and Android uses due to well Apple restrictions.
