Remove unnecessary folders from Folders pane
Each year I create a new Gmail folder for email messages sent that year (e.g., Sent Email 2021). All my sent messages from all my accounts are stored there. But for the past few years I've been living with extra folders in my folder pane: Sent 2019. Although this folder is not used to store messages currently being sent, it's still there. Although I want to keep the folder (under the Gmail account entry), I don't want to see it in the current Sent group. How can I remove it?
I also am seeing a separate "Sent Mail" folder in the Folders pane, even though none of my Accounts are set to use it in Thunderbird. (They all use "Sent Mail 2020.") I believe this folder is being used by lesser mail clients, such as Gmail on my iPad. I realize this is a problem with other programs' weaknesses, and I have to move these messages to the 2020 folder before closing the books. But is there any way to hide the folder from Thunderbird's "Sent" section in the Folder pane?
Lastly, under Drafts, Archives, Junk, and Trash I'm seeing many unnecessary folders. Other threads instruct right-clicking the unwanted folder and then "Unsubscribe ...". But I don't see any "Unsubscribe" choice when I right-click. I'm using TB 78.6.0.
Please help me clean house for the new year.

Right-click the account, not a folder, in the Folder Pane, Subscribe, Refresh, then uncheck (unsubscribe) the unwanted folders. Note that gmail automatically copies sent messages to the Sent Mail folder, so that is the one to subscribe to in TB. Since sent messages are stored there automatically, it's not necessary to check 'Place a copy in' in the Copies & Folders section of Tools/Account Settings. But you are free to create Sent Mail 2020 etc. folders (gmail 'labels') manually.
