We keep getting broken PST files on outlook because they are stored on a redirected folder, which is unsupported. So we are looking for an email client to move to that will not break because it's data is stored on a redirected folder, will Thunderbird suit us? If not, any suggestions?

There can be issues with Thunderbird profiles stored on network drives. Network saturation being one of them. However why redirect folders?

Normally I would expect either remote windows user profiles which will download the Thunderbird profile to the device on login and save it on logout, or per user home drive locations for the Thunderbird profile. Thunderbird looks for a profile in the profiles.ini file. The location in the profile.ini is by default relative to the files location. But should you move the profile, having a absolute path is more than acceptable, the isRelative value just has to be set to 0. (the following is an except from a working relative profile location)
