It used to be, upon entering an To: address, then pressing Enter, a new address line would appear allowing me to type another address. Now, the 1st address I type appears with a gray background, and when I press Enter, nothing happens. If I type a comma, then I can type the next address. I see that I can click CC or BCC to enter a new address line, but that makes the process more complicated than it used to be. See screen shot. Can I get back to what it used to be? Thank you.

Believe it or not, it is actually quicker now with less keystrokes and a whole bunch of other reasons. There is still some improvement with added optional functionality that are ongoing work in progress. No, you cannot use old method in version78*.

Ever since the start of 68 it's not so easy to go back to another version because there are now dedicated profile per installation in place. Also version 78 changed the file format of the address books. I could tell you whole procedure if you really need it. But it's hardly worth it just because you need to learn the new quicker method that's been created. It had me slightly confused at first, but it's a doddle and really much easier than you think.
