Seems that I had automatic updates for thunderbird and I'm now at version 91.5.0. I'm using 29~20.04.1-Ubuntu if that matters. I instantly regret the update, it seems that some new emails dissipated, filters are working sporadically and so on. How can I get back to my previous thunderbird version and how can I disable automatic updates?

You can disable auto updates at Preferences>General and scroll down to UPDATES. Ver 91.5.1 is out and it's possible (?) that it may be an improvement.

Hi, David. I went to Edit -> Preferences -> General, but there's no UPDATES option on 91.5.0.

It is possible your distributions has disabled that option and instead you are getting updates from their repository.

Be aware that going backward will almost certainly lead to some sort of data loss. Profiles are no longer backwards compatible.
