When receiving emails with logos in the message footer/signature, these logos are also added as a separate jpg attachment. The email may have only one actual attachment but can show up to 19 attachments, 18 of them being jpg files of the logo. When I print the email I want it to display the actual number of attachments (1) and not all the dross as well (19) as this is misleading.

How do I retain the logos within the email footer/signature but prevent such logos being shown as separate attachment?

This happens to me too, but only for certain senders. I believe it is due to the way they attach their signature/logo at the end of each email.
