No matter what sender address I use, when the mail is sent, FROM automatically gets converted into another sender address. I set another one to be the default identity, but it didn't help. That address still replaces the one I set. Does anyone have any ideas on what's going on here? Thank you.

Are any or all of your accounts with gmail?

If you have an account, say user@gmail.com, and another account uses that gmail account's smtp server to send, the sent messages will say they are from user@gmail.com regardless of which account you actually used to compose the message. This is something that gmail does and is not attributable to Thunderbird.

This means that each gmail account needs its own smtp setup, and non-gmail accounts shouldn't use gmail smtp to send them, unless you have added that non-gmail address to the gmail account under "Send mail as…" in the gmail online settings page.

Hi. No, I have my own, custom, domains at fastmail. Thanks for the tip, though.

For completeness, outlook.com/ hotmail/MSN / live mail also uses the information stored on the providers server in favor of the information inserted by Thunderbird.

However you issue is more likely to be you are using the same SMTP server entry on multiple accounts in Thunderbird.

Go to the outgoing server (SMTP) entry in your account settings. IS there an SMTP server configured for each account?
