For privacy I would like to be able to delete some of sensitive email on my gmail account while keeping them on my computer locally for possible future reference. That way anyone who gets or has access to my gmail account couldn't read my past email, while keeping them on my computer for myself. Is this possible?

That is what the Thunderbird Local Folders account is for. Make folders under Local Folders and place the email in those folders. I suggest you copy the emails into the new folders instead of moving them. Doing it this way if something goes wrong in the move you still have the original email in the gmail folder. When you know you have the emails in the new folders and you can open and read them you can delete the copies on the server.
