I get a colossal amount of junk mail from a particular domain i.e. Received: from amazonaws.com but I can't seem to find a property in the message filters that recognises the "Received:" tag in the message header. It would be great if that was added to the list of selectable properties to search for in the header.

Add custom headers by clicking the filter criteria button, the one that shows From, Subject, Age etc., Customize...., as shown in the attached picture.
