Although I have private browsing set to on, when I google a specific site it indicates how many times I have visited the site; how do I prevent this?

This is a google issue, not a firefox one.

Are you doing a google search with any of your google accounts (like G-mail) signed in ? It's best to sign out of all google accounts (once you are done with them) before doing any search. I believe they do have a setting not to remember your searches but I don't trust them.

Right, it is a Google problem. Go to google.com/history and then pause web history and/or remove all web history.
