I am looking for a way to us my desktop applications unconnected to the internet - short of unplugging my computer. Does such an option exist?

no worries, it isn't the most obvious place to look... yes, you will be totally disconnected as long as this is checked - however the option naturally only applies to firefox, but not for other applications on your system.
