We know our office computers have been, used for gambling and porn sites, all pc's have firefox which is set to clear history when closed, so my question is: Is there any way we can see what sites have been visited, once firefox has been closed?

Not unless you have a router or firewall or other security that keeps a log of internet traffic. So you have to check that out.
