"Remember Me" for website login is usually saved in a cookie for each website. Clear the cookie and you aren't "remembered" and will need to login again.

I have never seen "tracking" involved in that.

If I understand your response correctly, if I don't want to have to re-enter my logins, don't delete the cookies, but, its OK to check "Do Not Track" under Tools>Options>Privacy>Manage Tracking Settings
