In Thunderbird, I can customise the Address book columns to a small degree. For example I can click on the columns icon and it will display a dozen or so fields. I can then choose which columns to display. But there are many other fields in the Address book that do not appear in that list and so cannot be displayed. Surely there is a way to display all fields. What use is a field that can have data entered but can't be displayed in an email list?
