When trying to link a new chat account, I don't see the option for twitter, even though this article https://support.mozilla.org/en-US/kb/instant-messaging-and-chat states that it is possible to link my twitter to my thunderbird client. Is this feature only available in certain versions of thunderbird? If so, please let me know which ones!

Twitter is not available. It is not in list. It was removed some time ago in version 60.4.0 due to Twitter making changes to it's API's which basically forced people to use Twitter and not Thunderbird. As the 'Twitter chat' option did not work that feature was removed.

The information at the Help Article link has obviously not been updated. In recent years there has been so many constant alterations that it has been impossible for the volunteers to get all the Help Articles updated. Sometimes I've worked through some only to discover new changes rendered them immediately out of date.
