I'm using the dark theme, so in general (when I'm composing new emails) I'm writing in white text on a (nearly) black background.

I think it's when I reply to an email with black text on white paper, that my writing is black text on black paper. It's also happened the other way round - white text on white paper (background).

This may not fix your problem, but it's what I use. I have dark theme, and also use the 'dark reader' addon to manage the compose window.
