when I click on the bookmarks icon it opens the bookmarks menu on the left-hand side of the screen but I want to be able to just list the bookmarks in the centre of the screen underneath the bookmarks icon. I used to be able to do this but since resetting Firefox I have not been able to.

There are two Bookmarks toolbar icons. The one with no arrow will open the bookmarks sidebar, while the one with a downward-pointing arrow next to it will open the bookmarks menu.
To add the missing icon to the toolbar, right-click the toolbar and choose Customize, then drag it from the Customize Toolbar window onto the toolbar, and lastly click the Done button.

Also, there is no need to reset Firefox to discard your toolbar customizations. In the aforementioned Customize Toolbar window, you can click the Restore Default Set button to do so.
