I have Thunderbird version 115.5.1 installed on my Windows 11 laptop. I have logged into my gmail account and subscribed to google calendar. I have turned the off default reminders for events and don't have any extensions installed, but when I create a new event and select "No Reminder," Thunderbird automatically sets a 30-minute reminder. I can modify the reminder by editing the event after saving, but I can't directly create a new event with no reminder.

Check your Calendar Settings. At the top right of the Thunderbird window, click the menu button ≡ > Settings > Calendar > Reminder Defaults

I have had this same problem with my calendar as well, but my reminder was set for 15 minutes. After reading this, and you said it was specifically for a Google calendar, was when I realized what was happening. Google is setting the reminder, not Thunderbird. Log in to your calendar on Google and change the settings there. It will now work as expected.
