In firefox 77 I could choose different search engine for example duckduckgo as default search engine in private mode. In 78.0.1 this setting is missing, no way to search selected text privately or set different search engine for private mode. Only workaround is to go to about:config and enable "browser.search.separatePrivateDefault.ui.enabled". This fixes both problems. Is this still in beta and not officially available or are my settings wrong?

I assume it's still in beta because the default is false.

There was a user test conducted via the studies system that turned on this feature for a small number of users in Firefox 71-73. Maybe you were in that group? More info on studies: About Studies.
