I am getting the "Some plugins used by this page are out of date" notification on every page with Flash. The version of Adobe Flash that I am using right now is v.10 - I don't want to update to v.11 'cause v.10 shows much better performance on my PC.

How could I switch this notification off once and for all?

You can set the plugins.hide_infobar_for_outdated_plugin pref to true on the about:config page.
